Asparagus corn ramp butter salad

This is a super tasty salad, one of my personal favorites. The ramp add a great deal to elevate the flavors of the asparagus and corn. You can also try dill and chives with this salad, especially if you can’t find any ramp.

Asparagus corn ramp butter salad

Ingredients:

4 ears of corn, shucked

1 bunch asparagus, trimmed and cut into 1 inch pieces

salt to taste

1-2 tsp minced garlic

black pepper to taste

1 bunch ramp, stems (greens) diced

1 stick butter, softened

1 tsp lemon zest

1 tsp honey

1 bunch dill (optional)

Directions:

  1. Preheat oven to 350
  2. Steam corn, 10 minutes
  3. Steam asparagus 2-3 minutes
  4. Make ramp butter- mix ramp, lemon zest, salt, honey and butter
  5. Cut corn kernels off the cob
  6. Mix corn and asparagus, add butter salt and pepper to taste, and spread onto baking sheet
  7. Bake 10 minutes
