Avocado Daikon Salad



1 avocado, flesh chopped into cubes

1-2 cups daikon radish, shredded or cut into matchstick pieces (quick and easy with  a mandolin, which you can get for cheap at most asian supermarkets)

(optional) 1/2 cup carrots in matchstick pieces

1 tbsp fried garlic

1/2 cup fava beans or edamame cooked and outer skins removed,

1 tbsp kupee or regular mayo

sea salt or smoked salt to taste and for garnish

1 tsp chopped herbs such as oregano

1 tsp rice vinegar

1/2 tsp mirin

1/2 tsp wasabi paste

black pepper, to taste

(optional) 1 diced  scallion


1. Mix daikon with beans, avocado, carrots

2. Mix mayo with pepper, some salt, mirin, wasabi, and rice vinegar. Combine with ingredients from step 1.

3. Top with oregano, garlic, some extra salt

4. Enjoy!
